First, go to File > Preferences > Sessions and create an "Overnight" session that spans the overnight hours..
You can then create a chart, and assign it to this overnight session, and set the periodicity to "Time Per Bar: 1 Day" as seen below, and each bar will reflect the overnight period (prices and volume)...
